Out of the tropical countries,  Costa Rica is probably the most environmentally conscious one.  More than 25% of the country’s land is protected in national parks,  while 5% of the global biodiversity can be found in this rather small country.  Next to these impressive progress in conserving nature, Costa Rica has also established a reputation for stable growth.  Costa Ricans call themselves “ ticos “ and strongly believe in the absence of a national military. No surprise,  this progressive nation is said to be one of the happiest people on earth according to the happy planet index.  We firmly believe this tico care and thoughtfulness can be found in each cup of coffee from this central American beauty.

Costa Rica has a reputation for having some of the highest production and quality standards. This not only includes high quality standards with respect to coffee cups, but also to social welfare and environmentally friendly processing technologies in production.  Costa Rican coffees tend to have medium body,  are well balanced with fresh and sweet acidity.

Tarrazu is probably the most famous region of central Costa Rica  the hub of growing region for La Pastora quality is the mountainous Tarrazu canton in the San Jose province.  The Parris river nearby provides water to the highland region,  making it perfect for coffee production.  The mountains are part of the Talamanca Sierra, which runs through Costa Rica and Panama.

La Pastora is one of the classic qualities of Coopatarrazu.  Production for this regional selection takes place at farms between 1500 and 1800 meters above sea level.  Hence,  the quality is strictly hard bean or SHB the highest classification in Costa Rica. Predominant varieties are Caturra and Catuai.  The washed coffee is selected and screened following the European preparation quality standard allowing for 4 secondary defect equivalents and no primary defects.

Overall cup profile is sweet and fruity,  slight floral notes like black tea with delicate citric acidity
